HYDERABADI CHICKEN DUM BIRYANI

Introduction: 

Hyderabadi chicken dum biryani Most of us know that Hyderabad is famous for biryanis. It will be available in each and every corner of Hyderabad. It has a variety of tastes in Hyderabad most of the people across the state susto come and taste the biryani which is famous in Hyderabad.

History of Biryani:

Most of us till now don’t know the history about how Hyderabadi dum biryani has come.

In 18th and 20th century Hyderabad has been ruled by Mughlai and Irani and these are the people who have invented the Hyderabadi dum biryani.

They even used to promote the Hyderabad Cuisines with the help of Qutb shahi.

Ingredients:


Chicken

Basmati rice

Aromatic species(cinnamon, cloves, cardamom, bay leaves, nutmeg, black cumin, mace flower, star anise, lemon, saffron, coriander leaves, mint leaves, and fried onions

Onions

Tomatoes

Green chilies

Coriander leaves

Mint leaves

Red chili powder

Turmeric powder

Coriander powder

Gram masala

Chicken biryani masala

Curd

Salt

These are the main ingredients where people use for the preparation of biryani.

Preparation Method:

Take 1 Onion to sauté till golden brown color and keep aside

 Take a pan or a small vessel and add ghee or oil in that then add onions  sauté the onions till golden brown color 

Add green chili in the pan

Add the ginger-garlic paste in the pan mix well till the raw flavor goes off

After 5 minutes add tomatoes and mix  well

Take a small bowl to add yogurt or curd, red chili powder, turmeric powder, gram masala, coriander powder, biryani powder mix well and keep the mixture aside.

Add the mixture in the pan and mix well for 5 minutes

Add the chicken in the mixture.


Add coriander leaves and mint leaves.

Then add the chicken which you have marinated chicken should marinate before 3 hours or last night

We should soak the rice at least half an hour

Rice should be cook 80% and rest 20% will cook at the time of dum.

Then take the rice to add in the chicken mixture layers wise.

After adding all the things last but not least add saffron water on the top of the mixture.

Add ghee on the top.

Add fried onions on the top.

 Heat it on medium or low flame.

 After 10 minutes serve the BIRYANI.
